During WWII, the US government fostered the growth of the commercial industry as we know it today. Understandably, the government was looking for a reliable, stable source of food for the troops. The war ended and the troops returned home, but the commercial companies did not go away. And food has never been the same since.

Getting back to basics, Community Supported Agriculture [CSA] programs surfaced several decades ago and are rapidly gaining popularity. It truly is a win-win situation. Consumers reap the benefits of fresh, local produce, both familair and unfamiliar. Farmers appreciate the renewed interest in local food which could turn a hobby into a vital business.

Quick research proves that not all CSA programs are the same. These programs cannot be found in every part of the country or even in every part of Kansas.

Farm-Fresh
Eggs Easy
to Peel
Hard Cooking Eggs:
1. Place eggs in a pan &
     cover with water.
2. Cover pan & heat just
     to the boiling point.
3. Reduce heat to keep
     eggs just simmering
     (not a rolling boil;
     bubbles should just
     break the surface of
     the water).
4. Simmer 18 minutes.
5. Immediately pour off
     hot water & run cold
     water over the eggs.
6. Peel in a few minutes
     for easier peeling.

Soft Cooking Eggs:
1. Proceed as for hard
     cooked eggs, except
     when water begins to
     boil, turn off burner
     & remove from heat.
2. Leave eggs covered
     for 3 to 5 minutes,
     depending on degree
     of doneness desired.
3. Break shell through
     middle with a knife.
4. Scoop egg out using
     a teaspoon.

SPECIAL NOTE:
If eggs are cooked at too high a temperature, are cooked too long, or are not cooled immediately, a dark greenish/grayish coat may form on the outside of the yolk. This is not harmful to eat, but spoils the appearance. Overcooking will also toughen the white.

One more trick MHf finds helpful is to keep the eggs
at room temperature for
24 hours before cooking.
Purchasing
You select the products! Only you know which products best suit your needs and tastes. Selecting from a wide range of MHf products, your farm-fresh diet could be changed forever!
Diversity in MHf products allows customers  to redeem CSA benefits any time of year, regardless of the season. Yes - the garden hibernates and the pond freezes, but eggs and beef are always available. Wait until you taste the pastured poultry!
In an attempt to offer consistent service, traditional CSA programs are basically designed for the convenience of the farmer.

  • The farmer selects which items you receive based on the productivity of the farm and the availability of such.

  • The farmer establishes the length of the season. Primarily, farmers offer garden produce which limits the season to the warmer months of the year.

  • For the most part, the farmer establishes the parameters for the CSA program offered.

What is a traditional CSA?
Orders are calculated per market
value as listed in the weekly email. This total is then converted and rounded to the nearest unit.

At delivery or pick up, present
your CSA card so the respective
number of units may be voided.

In the case of a misplaced
CSA card, payment via cash
or check will be expected to
complete the transaction.

There is no refund for unused shares or units. After one year
of no activity, shares are inactive and the cards are voided.
