Making Simple Meals Special

Because I'm a CSA member, even the most basic meals I make aren't boring!

The picture above shows a simple meal — chicken, rice, sautéed vegetables, and buttered bread. If I had used ingredients from the supermarket, it would have been bland, but since almost everything came out of my CSA box, this supper was simply wonderful.

I roasted the chicken and made broth according to the instructions in Morning Harvest farm's Free Guide, "1 Bird, 4 meals" (see the link in the right sidebar). Cooking basic white rice in the broth produced a rich and flavorful side dish. I sautéed the asparagus in butter, lemon juice, salt, pepper, and a little garlic. Finally, the bread is from a crusty sourdough loaf included in the Full Share+.

The result is a well-balanced, healthy and tasty meal that didn't involve much planning or preparation.

Breakfast is even easier!

When I'm not using the bread and eggs from my CSA share to make French Toast Casserole, I serve them as pictured here. A slice of bread (this one has apricots in it!) with a drizzle of honey pairs perfectly with a couple of fried eggs. The beautiful golden yolks are flavorful and full of nutrition — much more so than pale yellow supermarket eggs.

Every week I'm struck anew at how good this food is.

The quality of the food in each CSA box is clearly and completely superior to that found in the stores I shopped at before — even the expensive health food stores don't give me eggs with that deep, rich color and flavor. Life in the kitchen is so much simpler now that I have a variety of high quality meat, produce, eggs, and bread packaged up and presented to me with a smile each week. My energy can go toward planning balanced meals and experimenting with the details of special dishes instead of maintaining shopping lists.
