When you subscribe to a CSA with incredible local produce, you end up with some interesting problems. Like what to do with a huge cantaloupe melon! Even after sharing half of it with our neighbors we still had too much to eat.
A normal melon-baller was no match for this giant — we had to pull out the ice cream scoop!
We ate some, we froze some, and we drank the rest.
Melon smoothies are so refreshing, especially when you add cucumber which we also had plenty of in our CSA box. This one was particularly healthful with coconut water, tatsoi greens, and a banana. Simple smoothies are wonderful for summer. They help you stay hydrated and make it so much easier to consume plenty of nutrients without heating up the kitchen!
