When I don't want to stand over the stove cooking normal pancakes, I make an oven pancake. It only takes a few minutes to mix up the batter and 20 minutes to cook. Plus, the recipe calls for four eggs which makes it protein-packed and a great way to used the eggs I receive every week in my CSA box.
The CSA boxes have been packed with various winter squashes these past few weeks and I love it! They look lovely on my table and they taste like autumn.
You can use almost any winter squash exactly like you would use pumpkin — use cooked, pureed squash in place of canned pumpkin in the usual recipes like pies and quick breads. Or add it to pancakes.
We receive jelly or jam in our CSA box every other week, and occasionally we get an experiment that turned out exceptionally well — like Gingered Pear Jam. This stuff not only tastes amazing, the ingredients are also completely guilt-free: pear, honey, whole lemon (rind & flesh), ginger root, and salt.
