I don't talk much about the meat from the box, but the time has come. I. Am. In. Love. Addicted. Hopeless. The quality of this meat is so good I had forgotten the taste of ordinary store-bought ground beef and especially steak. My husband prepares a mean steak, but steaks are all about the quality of the beef and it is hard to fake.
From watermelon to tomatoes and cucumbers, the box has been chock full of easy snacks to slice and serve over this Summer. They clean and pop onto plate, table, or ready hands so fast it's easy to go through the season having to plan meals more deliberately since so much of the produce is so quick to disappear.
I've shared a lot of recipes here on the blog, most of them simple, but none so simple as this: wash and eat.
It's easy to forget the beauty of eating fresh produce. Growing up mom always told us we didn't have to ask permission to snack on fruits or vegetables. We could help ourselves to the stock on the counter and in the fridge. I'm grateful for the fact that she helped me create this healthy habit early.
Sometimes, especially in the summer, I don't feel like cooking, but eating so much fresh food and cooking from scratch necessitates a lot of time in the kitchen. This recipe is a quick way to have a familiar comfort food (pizza!) without spending hours making tomato sauce and pizza dough from scratch, yet still uses mostly fresh CSA ingredients! These pizzas can be made as an appetizer or a full meal, depending on the toppings used.
